Beef Katogo




Beef Katogo
Ingredients (Serves 4)
-12 banana fingers, peeled as shown
-3 tablespoons, salted butter
-½ teaspoon, Spanish paprika
-1 teaspoon, curry powder
-2 tablespoons, finely chopped fresh coriander
-1 large onion, diced
-1 and ½ teaspoons, salt
-2 tablespoons tomato paste
-2 tablespoons, royco powder
-2 medium sized tomatoes, pureed
-1 garlic clove and I inch ginger pounded to form ginger garlic paste
-500g, par boiled beef
-4 cups, water

Directions
1. Boil bananas with salt and water for about 7 minutes on high heat
2. Meanwhile, melt butter in a pan, add ginger garlic paste and fry until aromatic
3. Add fresh coriander and fry until aromatic
4. Add onions and drained beef, fry until golden brown
5. Add spiced and stir until well coated
6. Add tomato paste and stir, then tomato puree
7. Add beef stock, stir and let simmer a few minutes
8. Add to bananas as it starts to yellow, reduce heat to low and let simmer gently until tender
9.Serve as desired
