Banana leaf rice




BANANA LEAF RICE.
Ingredients (Serves 4)
1 and 1/2 cups rice of choice..
2 tablespoons, oil
1 tablespoon, salt
3 cups, hot water.
1 large carrot.
1 large onion.
1 large green pepper.
DIRECTIONS.
1. In a pan, put oil, rice and salt and stir for 2 minutes, until aromatic.
2. Add 3 cups hot water, reduce heat.
3. Cover tightly and let simmer until 3/4 way drained.
4. Meanwhile, dice the carrot, onion and green pepper.
5. In an already prepared luwombo leaf, layer the rice with already diced vegetables.
6. Cover well and put in a steamer, cover with banana leaves.
7. Let simmer for 20 minutes and serve hot.
