Easy beef stew




Recipe serves 4

Ingredients

- 500g, beef cut into small bite size pieces

- 3 tablespoons, tomato paste

- 1 large potato, peeled and cubed

- 1 large green pepper, diced

- 4 and 1/4 cups, stock

- 2 tablespoons, finely chopped fresh coriander

- 1 tablespoon, salt

- 2 tablespoons, vegetable cooking oil

- 1/4 cup, tomato puree

- 1 large onion, diced

- 1 tablespoon, tomato paste


Directions

1. In a pan, boil beef with salt and 1/4 cup beef stock on very low heat. 

2. When beef is drained, add oil and fresh coriander, stir well until beef is lightly browned

3. Add onion and fry until aromatic

4. Add tomato paste, tomato puree and stir well to mix

5. Add remaining stock, cover and let simmer for 30 minutes

6. Add fixed potatoes and green pepper, let simmer 15 minutes
