Fresh pea stew




Pea Stew
Ingredients (Serves 4)
-11/2 cups, fresh peas
-4 cups, water
-1 tbs, salt
-½ tsp, soda bicarbonate
-1 carrot, diced
-1 large onion, chopped
-¼ tsp, black pepper
-2 tbs, Royco powder
-1 tablespoon, curry powder
-1 teaspoon, powdered coriander
-1 teaspoon, cumin powder
-1 tomato, pureed with -1/8 cup water
-1 green pepper, diced
-¼ teaspoon, turmeric powder
-1 tablespoon, tomato paste
-2 tablespoons, salted butter

Directions
1. In a pan, boil water
2. Add soda bicarbonate to boiling water and let it foam
3. Add fresh peas with salt, let boil uncovered until ready
4. Drain ready peas from water, set aside
5. In another pan, melt butter on very low heat
6. Add onions, fry until transparent
7. Add carrot, fry until brightly colored
8. Add green pepper, fry until brightly green
9. Add peas and black pepper, stir
10. Add turmeric powder, curry powder, coriander powder, cumin, pureed tomato and tomato paste, stir well
11. Add the set aside pea soup, cover and let simmer 10 minutes
12. Add royco powder, stir and let simmer uncovered, 5 minutes
13. Serve as desired



A fresh pea stew suitable for serving with posho, potato dishes, rice and banana dishes
