Cream of.mushroom soup




Mushroom Soup
Ingredients (Serves 4)
-250g, fresh mushrooms, chopped
-1 tablespoon, fresh coriander, finely chopped
-1 cup, milk
-3 tablespoons, salted butter
-1 teaspoon, salt
-¼ teaspoon, black pepper
-¼ cup, cream

Directions
1. In a pan, melt butter on very low heat
2. Increase heat, fry onion until fragrant
3. Add coriander, stir until fragrant
4. Add mushroom, cover and let simmer until softened
5. Reduce heat, add milk and ¼ cup fresh cream, black pepper, salt, cover and let simmer 5 minutes.
6. Set aside, let cool and puree until smooth
7. Warm and serve as desired.
